Chunky Vegetable Soup
Ingredients:
2 tsp. vegetable oil
1 cup chopped onion
3 cup water
4 cup vegetable broth
1 Tbsp dried oregano or basil
¾ tsp salt
½ tsp pepper
½ lb cut carrots
1 can navy beans
1 can whole tomatoes
½ cup orzo
Heat oil in soup pan, add onion and garlic; sautee 5 minutes or until tender. Add remaining ingredients. Bring to boil. Cover, reduce heat and simmer 20 minutes. Add orzo; cook uncovered over medium heat an additional 10 minutes, serve.
Good with zucchini added in the last five minutes. Or serve with helping of fresh spinach on top. Also good with tortellini instead of orzo.
